Aloo Capsicum

Potato/Aloo - 3 small sized;Capsicum/Bell peppers (color as per taste preference) - cut as cubes, 1 cup

Preparation:
  • Blanch the skin peeled cut potatoes for 5 mins
  • In a pan, add 5 tsp oil -> add 1/2 tsp cumin seeds and finely chopped onions and cook till it is slightly brown.
  • Add in 1 tsp ginger garlic paste + blanched potatoes (semi cooked) + spice powders - 1/4 tsp turmeric powder, 1/2 tsp kashmiri red chilli powder + 1 tsp chilli powder + 1 tsp coriander powder + 1 1/2 tsp Kuzhambu masala powder(post related to that) + 1/4 tsp amchur powder + 1/2 tsp garam masala powder and salt (Add little water if it sticks to the pan)
  • Cover and cook in medium flame for 7 - 10 mins /till the potatoes are cooked through
  • Add in cut capsicum and 1 medium sized tomato cut as cubes -> cook for 5 - 7 mins
  • Adjust salt and water per the desired consistency. 
Tastes best with any pulao variety.
