Chana Pulao
Preparation:
- Pressure cook the soaked chana and collect in a separate bowl.
- In the same pressure cooker, add in 5 tsp oil + 2 tsp ghee -> add in whole garam spices (1 Bay leaves, 1 small piece cinnamon, 1 clove, 1 black cardamom, 1 green cardamom) + 1/2 tsp cumin seeds and 1 large onion thinly sliced - cook till it is slightly brown.
- Grind the below ingredients to a smooth paste
- 1/2 tsp fennel seeds
- 1/2 tsp coriander seeds
- 1 1/2 tsp ginger garlic paste
- 1 green chilli
- few coriander leaves with stem
- Add in this paste and cook till oil separates/raw smell is off
- Add in 2 slit green chilli + 1 medium sized chopped tomato and cook till is dissolved and combined
- Add in the cooked chana + spice powders - 1/4 tsp turmeric powder, 1/2 tsp garam masala powder + 1 tsp curd -> cook for 3 - 5 mins
- Add in water and bring it to rolling boil stage
- Add in the soaked basmati rice and cook till the water is reduced
- Cook covered in dum for 10 mins in complete low flame.
- Note :
- Spiciness to the pulao is from green chilli and hence to be added according to taste preference
- Basmati rice to water proportion -> 1: 2 (For few rice brands it will be 1: 1 1/2)
