Beans Egg Scramble
It is so simple to prepare and makes an excellent side dish for South Indian Kuzhambu variety.
Beans chopped - 1 -2 cup;Eggs - 3
Preparation:
- In a pan, add 3 tsp oil -> add finely chopped onions + 2 green chilli + 2 dried red chilli once the oil is hot and cook till the onions turn translucent.
- Add in the chopped beans and mix well -> add water + salt -> cook for 7 - 10 mins
- In parallel, beat 3 medium eggs with little salt and add it to the pan once the beans is cooked through.
- Give a gentle mix to combine eggs with beans completely and cook till the eggs are done.
