Radish Kara Kuzhambu
Out of many root veggies, Radish can be a key ingredient for South Indian Kara Kuzhambu recipe.
- In a pressure cooker, add in 5 tsp gingelly oil -> add in 1 tsp mustard seeds + 5 - 7 fenugreek + 1/2 tsp cumin seeds + 1/4 tsp fennel seeds -> cook till the spices are cooked through
- Add in 7 - 10 shallots + few curry leaves + 10 garlic pods -> cook till the shallots turn translucent
- Add in 1 chopped tomato and cook till it is dissolved and combined
- Add in spice powders - 1/4 tsp turmeric powder + 2 heap tsp of Kuzhambu masala powder (proportion that I use is available here)
- Add in cut radish(1 large radish) + tamarind water + salt -> cook for 2 - 3 mins
- Grind below ingredients to a smooth paste and add it to the cooker
- 2 tsp shredded coconut
- few curry leaves
- 1/2 tsp fennel seeds
- Adjust water if required.
- Cover and cook for just 1 whistle
- With this, preparation is done and good to have as is. Optionally, can give an additional tempering with 2 tsp gingelly oil + 3 - 5 shallots + 5 garlic pods + asafoetida.
