Mutton Pepper masala

Mutton/Goat meat cooked in fresh ground powder made using black pepper, curry leaves and few select garam spices, makes out an appropriate combination of ingredients. Taste and flavor of the masala is further elevaed with final touch of tempering with ghee.

Preparation:
  • Marinate the mutton pieces(350g) with 1 tsp of curd, 1/4 tsp turmeric powder, 1 tsp ginger garlic paste, 1 tsp of chilli powder, pinch of garam masala and salt (Overnight for better flavor infusion)
  • Pressure cook the marinated mutton. 
  • Dry roast 1 tsp of black pepper, 1 tsp of fennel seeds, 1/4 tsp poppy seeds, 1 small star anise, small piece of stone flower/kalpasi and few curry leaves -> grind to powder.
  • In a separate pan, add 5 tsp of oil, add 1 large finely chopped onions once the oil is hot. 
  • Add 1 tsp of ginger garlic paste and 1 large chopped tomato -> cook till the tomatoes are dissolved and combined.
  • Add in all the spice powders - 2 tsp Kuzhambu masala powder, 1/4 tsp turmeric powder, 1/2 tsp garam masala, 1/4 tsp cumin powder - cook for 2-3 mins
  • Add in the mutton flavor infused water(the one used for pressure cook) -> cook till it is reduced as a masala to the desired consistency.
  • Add in the cooked mutton pieces -> mix well and let it combine with masala
  • Once the masala is upto the desired consistency, turn off the flame and add in the fresh ground powder and final tempering using ghee. (Ghee + shallots/pearl onions + curry leaves)
