Midday Meal - Kuzhambu & Kootu Combi
I have used curry leaves to prepare kuzhambu and carrot for kootu.
Carrot kootu:
- Soak Moong dal for 15 mins.
- Pressure cook chopped carrots, soaked moong dal, turmeric powder, salt and asafoetida for just 1 whistle (Moong dal cooks fast)
- In a mixer grinder, add and coarse grind -> shreeded coconut + green chilli + black pepper + cumin seeds
- Once the carrot and dal is cooked through, add in the coarse ground paste.
- Finish it off with tempering using mustard seeds + cumin seeds + dried red chilli + asafoetida + curry leaves
Boiled rice:
- Soak the parboiled rice for 30 mins
- In parallel, add water to a large pot and bring it to rolling boil -> add soaked parboiled rice
- Drain the water once the rice is cooked.
- Note : Its good to cook rice this way than to pressure cook.
