Midday Meal - Kuzhambu and kootu

Kuzhambu and Kootu/subtle poriyal is one of the well known combi for a midday meal. Kuzhambu can then be extended and prepared as specific variety with any veggies/herbs/spices. For kootu again we can make use of veggies like cabbage, white pumpkin, chow chow and so on. 

I have used curry leaves to prepare kuzhambu and carrot for kootu. 
Carrot kootu:
  • Soak Moong dal for 15 mins. 
  • Pressure cook chopped carrots, soaked moong dal, turmeric powder, salt and asafoetida for just 1 whistle (Moong dal cooks fast)
  • In a mixer grinder, add and coarse grind -> shreeded coconut + green chilli + black pepper + cumin seeds
  • Once the carrot and dal is cooked through, add in the coarse ground paste.
  • Finish it off with tempering using mustard seeds + cumin seeds + dried red chilli + asafoetida + curry leaves
Boiled rice:
  • Soak the parboiled rice for 30 mins
  • In parallel, add water to a large pot and bring it to rolling boil -> add soaked parboiled rice
  • Drain the water once the rice is cooked.
  • Note : Its good to cook rice this way than to pressure cook.
