Spinach Peas Pulao
Use of Spinach in cooking is extended to Pulao, paratha recipes in addition to its regular usage in salads/soup.
For this recipe, I have combined green peas and can be substituted with other veggies like panner/gobi/aloo/carrot/beans along with Spinach per our desired taste preference.
Preparation:
- Spinach - 150g, Basmati Rice - 150g
- Blanch washed spinach leaves for 5 - 7 mins and grind it to smooth paste once it is down to room temperature
- In a pressure cooker, add 5 tsp oil -> add in whole garam spices(2 Bay leaves, 1 small piece cinnamon, 1 clove and 1 cardamom) and 1 medium sized onion once the oil is hot and cook till it is slightly brown.
- Add 1 tsp ginger garlic paste and cook till the oil separates.
- Add in the spinach paste and 2 slit green chillies, green peas and 1 tsp of curd and cook till oil separates.
- Add in water and adjust salt at this stage
- Once the water comes to rolling boil, add in the soaked basmati rice and cook till the water is reduced.
- Bring the flame to complete low and cook in dum for 10 mins
- Note : Basmati rice to water proportion varies depending on the type, I use 1 : 2
