Beets & Carrot Pulao
- On a hot pan/pressure cooker, add oil -> add whole garam spices once the oil is hot
- Add thinly sliced onions(1 large onion) -> cook till it turns slight golden brown
- Add ginger garlic paste(1 tsp) -> cook till oil separates
- Add slit green chilli(2-3), grated beetroot, carrot(together 1/2 cup minimum) and peas(optional) at this stage -> saute for 2-3 mins
- Add turmeric powder(1/4 tsp), garam masala(1/2 tsp) and salt
- Add water -> once the water is at rolling boil stage, add soaked basmati rice
- Once the water is almost reduced, bring it to full sim -> cover and cook in dum for 10 mins.
- Once done, finish it off with ghee (1/2 tsp)
- Note :
- Rice - 150g; rice to water proportion -> 1:2 (some basmati rice calls for 1: 1 and 1/2)
- Spiciness to the recipe comes from green chilli alone and hence to be added according to the spice level
