Paneer Tikka Masala

Paneer Tikka Masala is prepared by incorporating Panner Tikka in well cooked masala base.
Paneer Tikka marination:
Mix all the below ingredients in a bowl and add cut paneer pieces, bell peppers and onions (bell pepper and onion cut in cubes)
Refrigerate the marination for about 20-30 mins.
  • Thick curd
  • Ginger garlic paste
  • Ajwain
  • Chilli powder
  • Coriander powder
  • Kashmiri red chilli powder
  • Cumin powder
  • Chat masala
  • Amchur powder
  • Roasted Gram flour
  • Finely chopped coriander leaves
  • Salt
Preparation steps:
  • Onion to Tomato proportion : 1:3 or 4
  • While the marination is resting, we can kick start the recipe
  • On a hot pan, add oil and once it is hot enough add garam spices. (cinnamon, cardamom, clove)
  • Add onions and saute till it turns to complete brown. (Need patience here, will take quite a while)
  • Add ginger garlic paste and cook till the raw smell goes off
  • Add tomato puree (grind tomatoes without water) and cook till the oil separates
  • By the time the masala cooks, roast the marinated paneer/bellpepper/onion in parallel in separate pan
  • Once the tomato puree in the masala is cooked well, add spice powders - chilli powder, turmeric powder, garam masala and salt.
  • Can add the curd paste from the marination if it is left over.
  • Add water (to adjust the consistency) at this stage and kasoori methi
  • Cover and cook till the oil separates
  • At the very last stage once when the masala is ready per the consistency you desire, add the roasted paneer, bell peppers, onions and cook for 2-3 mins only.
  • Paneer would have been cooked well while roasting. Cooking it for long in the masala might turn it chewy.
Do try the recipe once you have enough time(takes little extra time than the usual masala)
Can experiment with mushroom/cauliflower/chicken as well.
