Tomato Thokku | Tomato Chutney

Tomato thokku/chutney is something that we never get bored of even if we have every day of a week in a row.
Ingredients:

Preparation steps:
  • Add gingelly oil in a hot pan
  • Once it is hot enough, add mustard seeds  and allow it to splutter
  • Add asafoetida and turmeric powder -> mix well
  • Add the main ingredient -  cut tomatoes, chilli powder and salt -> mix well
  • Cover it with lid and reduce the flame to medium sim.
  • Behind the scene : Tomatoes releases all of its water and does the work on its own to get reduced to a paste consistency.
  • Our job is to stir occasionally
  • Once it is down to the said consistency, we are good to turn off the stove.
Other Notes:
  • Tomatoes MUST be stirred occasionally
  • Have an eye on the pan/be near (It will take time to reduce depending on the quantity)
  • Don't add water
  • Gingelly oil is a must for the expected taste
  • If you are skeptical about salt quantity, add very little in the beginning as a catalyst for it to cook. Adjust at the end when it is reduced.  
  • Chilli powder used is a mixture of dried red chilli + coriander seeds in equal proportion (mill ground powder)
  • Good to store in dried air tight container once it is down to room temperature.
