Tomato Thokku | Tomato Chutney
Tomato thokku/chutney is something that we never get bored of even if we have every day of a week in a row.
Ingredients:
Preparation steps:
- Add gingelly oil in a hot pan
- Once it is hot enough, add mustard seeds and allow it to splutter
- Add asafoetida and turmeric powder -> mix well
- Add the main ingredient - cut tomatoes, chilli powder and salt -> mix well
- Cover it with lid and reduce the flame to medium sim.
- Behind the scene : Tomatoes releases all of its water and does the work on its own to get reduced to a paste consistency.
- Our job is to stir occasionally
- Once it is down to the said consistency, we are good to turn off the stove.
Other Notes:
- Tomatoes MUST be stirred occasionally
- Have an eye on the pan/be near (It will take time to reduce depending on the quantity)
- Don't add water
- Gingelly oil is a must for the expected taste
- If you are skeptical about salt quantity, add very little in the beginning as a catalyst for it to cook. Adjust at the end when it is reduced.
- Chilli powder used is a mixture of dried red chilli + coriander seeds in equal proportion (mill ground powder)
- Good to store in dried air tight container once it is down to room temperature.
