Green Chicken Masala
Green masala:
- Grind washed coriander leaves, mint leaves, green chilli, cinnamon, clove, cardamom, ginger garlic paste, fennel seeds, curd, and salt to a smooth paste.
- Coriander leaves to mint leaves proportion - 2 : 1
- Green chilli based on spice level
Preparation steps:
- On a hot pan, add oil -> add thin sliced onions once oil is hot -> cook till it is slightly brown.
- Add the ground paste and cook till the masala is cooked/oil separates
- Add spice powders - turmeric powder, coriander powder, cumin powder, pepper powder.
- Coriander powder to cumin powder proportion - 2 : 1
- Pepper powder based on spice level.
- Turmeric powder is a must for all Non veg recipes
- After adding spice powders, cook for about 2-3 mins
- Add chicken and water(if required) -> cover and cook for 15-20 mins in medium sim
- Adjust salt and masala consistency.
Note:
- Chicken will release water as it cooks. Water should be added considering this.
- If chicken with fat is used, layer of oil will surface the masala once/as it cooks. Oil should be added considering this.
- For the green masala, coriander stem can also be added along with leaves.
- Cooking time of chicken differs with temperature and quantity. Timing to be considered accordingly.
