Chicken Muffin
- Eggs are the base for this muffin recipe. No other flours/leavening agents!
- For the base,
- Beat 3 large eggs to nice frothy texture.
- Add in all your favorite veggies. I chose onions, tomatoes, grated carrot, cut spinach leaves, black olives, red bell pepper.
- For flavors, add in garlic powder, Italian mixed herbs, pepper powder.
- Semi cook the chicken with preferred spices of your choice.
- In a butter glazed muffin tray, pour in the prepared muffin base and top it with chicken pieces.
- In a preheated oven of about 350 degree Fahrenheit, cook the muffins for about 15-20 mins. (Do check it after 15 mins, temperature does vary across)
Experiment it by replacing chicken with meat of your choice/Paneer/Mushroom.
