Mix Veg Curry

Mix veg curry is prepared using onion-tomato gravy or makhani gravy as the base. I have tried the former one as the latter is already tried as part of Paneer Tikka masala.
Veggies used:
  • Carrot
  • Beans
  • Green Peas 
  • Sweet corn kernels
  • Cauliflower
  • Paneer
  • Green bell pepper
  • Red bell pepper
Preparation:
  • On a hot pan, add 3-5 tsp of oil -> add cumin seeds once the oil is hot
  • Add 1 finely chopped onions and cook till it turns brown.
  • Add 1 tsp of ginger garlic paste and cook till the oil separates.
  • Add tomato puree made out of 3 large tomatoes (without adding water) -> cook till it is reduced/oil separates
  • Once the tomatoes are nicely cooked, add in cashew paste(5 whole cashews soaked in hot water and ground to a paste) ->add in all spice powders - Chilli powder(1 tsp), Kashmiri red chilli powder(1/2 tsp), coriander powder(1 tsp), cumin powder(1/2 tsp), garam masala(1/4 tsp) and amchur powder(1/4 tsp)
  • Once the masala is cooked well, add in the veggies and cook for 10 - 15 mins
  • Adjust salt and water at this stage per the desired consistency
  • Finish it off with butter and kasoori methi.
  • Note:
  • Veggies cook in a different time and hence to be added accordingly. In the veggies list that I took, 
    • carrot + beans + cauliflower is added at once and cooked for 7 mins
    • second, Green + red bell peppers at once for 2 -3 mins
    • at last, frozen green peas + frozen sweet corn + paneer -> 5 mins. 
  • First added veggies(carrot, beans, cauliflower) actually takes 10 mins to cook. Instead of fully utilizing its actual cooking time, split per the whole set of veggies used for the recipe. By this way, all the veggies will be cooked perfectly.
